Really Quince?!

I’ve been wanting to go to Quince ever since they reopened, and I’m shocked after seeing some example menus online. Do they really want you to pay $390 and then pay tons of money to add their signature beetroot spaghetti and/or any meat? Is this actually how their gastronomy menu is?
