Client wants to dine at a fixed course restaurant. Polite way to speed up the menu?

Business client chose a fixed course restaurant for dinner. Last time I went there, it took 3 hours to receive all 5 courses. I don't relish spending that much time with them.
We don't have to have all 5 courses at once. But for instance, can they serve 2 courses at once instead of all separately?
Is there a "proper" way to ask for this (certain terminology to use)? Or can I just word it simply to my server?
