I've just tried my second batch of Ube wine and it's developing a mould on top (pictured) after a few days. Wondering if anyone has any advice. Here are the steps I followed on the last batch:
Added 1kg of Ube with 1kg(L) of boiled, filtered water along with 2g of Amylex 4T and blended it together.
Put the entire mixture into a pot along with another 1kg(L) of boiled, filtered water and bring the temp up to 85 °C and hold it there for 5 minutes.
Tossed in 250g of Organic Cane Sugar, 5g of citric Acid, 5g of Crème de Tartare, and 5g of Yeast (EC 1118) and blended with a hand blender
Put it into a sealed fermonster.
All tools/equipment gets a solid clean with SCP along the way.
If anyone has any insight I'd greatly appreciate it.
