Carrot Greens?

I've been struggling with what to do with carrot greens to not need to discard them to compost. I'd like to try a carrot green ferment.

Has anyone tried this? I'm thinking of maybe adding some grated carrot to put sweet with bitter, and getting a kraut or slaw-like crispy product after about 1 - 1.5weeks in 4% brine.

Any thoughts or additions I should consider?

edit: Well, that didn't work. Very bitter, very stinky.
