Modding Tutorials that focus on modeling/rendering?

I'm working on a new mod that requires blocks to change the texture of some parts based on some unlisted properties.
I have a base json model, I'm wondering if there is a way to swap the texture definitions based on an IUnlistedProperty (my understanding is those can't be used as variants). I think I need to use a baked model, but after that I'm lost.
Does anyone know of a good tutorial for modeling, for someone who's programming experience tends to be more on the number crunching side and less on the aesthetics. My day job has me programming in ancient FORTRAN, so all the terminology used in models/rendering is fairly confusing.
