Traveling international close to visa expiration

I would appreciate advice on traveling to India given my current immigration status. My STEM OPT Extension (EAD) is set to expire in August 2025, while my visa expires on December 11, 2024. I am starting a new job, and my first pay stub is scheduled for November 4. I need to travel to India briefly and will return by mid-November.

Is it safe to travel to internationally this close to visa expiration, but with a valid EAD?

I have been told that showing recent pay stubs ensures exployment verification. Will two recent pay stubs be sufficient documentation to demonstrate ongoing employment and facilitate smooth re-entry into the US?
