Fruit Fly Infestation At Work

So I work in a bakery, and in our donut case we have a bad fruit fly problem. I have tried the only 2 things I can think of which are regular cleaning of the case and a homemade fruit fly trap (apple cider vinegar in a container, saran wrap over the top, poke some small holes in it.) The fruit flies are out of hand and those traps aren't working (it catches 1 or 2 flies and there are about 50 in each case.) What else can I do to fix the problem? It is starting to get cooler out so we shouldn't get any more from the outside soon.
