ELI5: Why don't skeletons fill the world? (e.g. What happens to animal skeletons?)

I imagine in cities, when dead animals are discovered on the street, etc, they're picked up by someone or other and thrown away. But the woods are teaming with animals, big and small. There must be ~trillions of animals bird/squirrel-sized and larger dying every year. I've seen plenty of live deer in my life. Why don't I hardly ever see skeletons when I go into the woods?
