ELI5: Why do we need so many types of plastic for containers?

I'll admit it, I'm a west coast liberal recycler.

Considering that, I wonder why can't we just have two types of plastic: one for more "rigid" containers and one for flexible (ie squeezable) containers? This would make recycling easier - no need for the 1000s of bins Portlandia illustrated so well - and I'd imagine it would make recycling them a lot cheaper and more widely utilized.
