How do you explain your ability to speak a foreign language?

I have been an exmo for 6 months. I just went in for my annual physical to a new doctor and he happened to be from Nicaragua. I started talking to him in Spanish (I love people’s reactions when a 6’3” Scandinavian looking guy start speaking Spanish fluently!) and after a minute he asked how I knew how to speak so well. I gave my automatic answer of β€œI served a two year mission for the LDS church in Mexico.” and instantly felt super uncomfortable!

In order to avoid associating myself with the church like this in the future I was wondering how others explain their ability to fluently speak a foreign language?

(It is especially hard to explain for me because I speak Spanish with a very distinctive, central Mexico accent)
