Can I quit soon after the vesting date, and be eligible for vested stocks?

My employer offers their employee stock plan through E-Trade. Say my vesting date is on May 25 (Saturday) 2024. I've noticed previously, even if it vests on a weekday, the shares aren't typically released on the same day. (They usually take a couple days, and I can't seem to recall how many exactly.)

My questions are, * It vests on a weekend, so I'm suspecting the processing may be delayed further. * if I were to set my last day as the following business day - May 27th in this case, would I still receive the vested stocks ? I'm worried if they'd (E-Trade or my employer) will suspend it during the processing time, once I quit.

I have to join another org soon, and I'm trying to not lose a sizeable stock vest, so trying to make the best of the situation.
