Old Saxon use of Dorian scale and harmonic patterns

Hello,

I'd be really interested in reading about the specific uses of the dorian scale and the typical harmonic structures that we find in older English music.

You can hear them in old seea shanties, or traditional tunes (ex: Scarobourgh Fair), and they made their way in some classical music too. I'm mainly thinking of Ralph Vaughan Williams' music, like his English Folk Song Suite. It's mainly a regular dorian scale, but there is a specific English color about it in these pieces.

I'd love to read more about that musical language. Do you guys know of any good books that address that subject?
