New beans longer pull time

So got some new beans and was calibrating for them. Started with a test pull from the same settings as my previous beans and the shot took about 40 seconds to pull 36g. That was significantly longer than my previous beans at around 28 seconds for the same weight. To my surprise though, the shot tasted great. I recalibrated to get the time down to around the 25-30 second mark by going a bit more coarse on the grind and now it's got more of a sour note than before. Anyone here actually prefer to go quite a bit longer with their shot pull time or should I be fixing something else like pressure or water temp? Breville barista express machine btw.
