Overly bitter coffee?

Hello friends, I'm having some troubles with my coffee being overly bitter even after adjustments. It is a darker roast, which is something we don't normally go with. However, even after all adjustments, it still seems overly bitter.

I am at 185° F which I adjusted down from 195° F. I have also opened up to a coarser grind, getting all the way to a 36g shot in like 23-25 seconds. Even after all these adjustments to extract less the coffee is still quite bitter. Do I just have a bitter coffee, and that's the end of it? What else can I do to help reduce bitterness.

I am running an Ascaso Steel Duo (new model) and a Niche Zero. TYIA
