So I got a lot of helpful comments previously, and I've gone back through the documentation regarding set up of the printer in general, etc., as well as CR Touch.
The mesh still seems to show the front of the bed significantly higher than the back. The fact that I can view the mesh leads me to believe the mesh must be saved...? Sound pretty logical.
I flipped the stock glass bed to the smooth side. There is definitely space between the aluminum heat plate and the glass. Should I assume the glass is more level? I can try and find a truly level surface to test I suppose. Would adding clips on the edges be helpful or harmful?
Also, I've tried a variety of the codes in my slicer softwares (both the Creality and Cura software) and it just doesn't seem like it is adjusting to the mesh as it prints. Front drags to the point of no filament printing, while middle and back print better, but almost too high.
EDIT: Ingur link to add printer settings
