Leveling corners ruins center and vice versa

Everything worked fine for a while, then I took 4 months off of printing and had to replace the nozzle. Now if I paper level the corners the center is too high, then when I get the center good the corners are all too low. Is my bed warped beyond usability? I have a CR touch but that doesn't seem to do any good. But I think I'm missing some step (some sort of "add gcode to every print"?)
