What Are All These Settings?

Several years ago I bought an inexpensive 3d printer (don't remember the make) and it worked fairly well I ran it with a Raspberry Pi. I got pretty good prints, and I liked the experience of 3d printing. Before I go on -- I should tell you that I live in a rural community where 3d printers are not common, so I am pretty much self-taught.

My life style changed, and I had to make changes ... I gave my little cheap printer away, and I decided that if I ever got a place I would get back into the world of PLA filament, and falling asleep to the sound of stepper motors.

Life changes and 4 years later I assembled my Ender 3. The first few prints I made were good, and now it has all gone to the place where the iceman ventureth not.

I assume that I am doing something(s) wrong (it is a poor workman who blames his tools).

The first problem is I can't seem to get good filament adhesion. Leveling the bed seems to be impossible. Is there a specific order of getting it consistently correct. It seems like between leveling the bed and hitting "Print from TF card ... the bed is no longer level ... first layer is is always messed up, and thus the print never gets properly started.

I see all these settings and no one seems to have written an explanation of what they mean. For example "Store settings" Does that refer to heat settings, or position settings, or both ... I'm not sure it really matters.

All those speed settings, I understand what they mean, but what do I adjust to get better results? There seems to be several paces to change heat settings, but often they seem to override each other.

I suppose I should end this rant now, any advice is appreciated!

Is there a good book (real physical book with paper pages and covers) explaining all this, preferably focusing on the Ender 3?
