What's the deal with the bed sheets here?!

Sirius question, because I'm not following how bed sheets work here, and I've already bought 4 different brands without success. Back where I come from bed sheets consist in 3 parts:
- mattress cover
- 1 or 2 pillow cover (depending on bed size)
- top sheet.
Then on top of that we would just use a duvet or a duvet cover.
So far all I've found are duvet covers that look just like bed sheets. Now I have to go back to the stores and return them.
