Hello there! MacBook Pro M1 Pro or Max for workflow?

Hello there! I recently picked up a Sony FX30, but found that my current MacBook(2021 M1 MacBook Pro 8-core GPU, 8-core CPU, 16gb ram) isn’t as fast in editing 4K 120 footage(XAVC S-I 4K, exporting to mp4). I’m going to start doing a lot more 4K 120 shoots in the future but want to make sure that everything works fast and smooth, since there will be deadlines involved. I want to stick with Final Cut, hence the reason why I don’t want to switch to a windows machine. Is the Apple M1 Pro or Max chip the one suitable for 4K 120 editing? And how well will said machine handle the workflow? I’m also an avid user of Topaz Video Enhance, and find that it’s an overnight render job for my current machine. I’m also actively looking for a new editing rig…
