Fast Urban Rider / Motorcyclist - ebike newbie looking for some general direction

Hoping for some general 'look over there, try this manufacturer, check out that youtube channel' kind of direction as I look for my first conversion kit or dedicated ebike purchase. My current bike is a specialized allez sport (a ... low-mid tier road bike?) and my riding style is aggressive and maybe a little formed by riding in DC and NYC as a kid and a decade of motorcycle racing on the amazing roads and tracks of northern cali ... Nowadays I peak at about 22-24 mph over a short distance (< 5 miles) ... I average 18 mph over 5 miles on dense downtown urban streets in my daily commute. You know, fun urban riding. Lot's of interesting things happening all the time, head on swivel, motorcycle gloves to protect the knuckles.

I'm interested in a conversion kit (prob rear geared hub if I convert my road bike, carbon fibre front forks and aluminum frame so...yea, geared rear hub, wider rims, disk brakes up front?) or dedicated ebike (<$3k if that route) that will let me ride 30-35 mph on my own for at least 10 miles. Ideally I want to effortlessly catch up to the 40 mph traffic so I can slot in behind a passing SUV or box van, and to stop on a dime when they brake hard in front of me, and something that retains the flickableness my current road bike has so I can hop, slip, skid, stoppie, all the things I do regularly to avoid squish time with the big heavy metal animals I ride alongside. Definitely some hills in the picture.
