Diabetic-friendly recipes for aunt who doesn’t cook much?

Hi, I’ve been looking for recipes for my aunt who has recently become a type two diabetic. I’ve posted in other places (r/Eatcheapandhealthy) asking for meals I might be able to make with her, but I’d also like to have some she could make without me there. She makes great cinnamon rolls, so she‘s not a total novice, but because of her disabilities she hasn’t been cooking much in recent years and anything that is long or complex is difficult for her.

As far as I know, she grew up eating mostly Midwestern food (think steak and cornbread) with a little Mexican thrown in. Most of my 15 minute recipes are pasta which is… not diabetic-friendly. I doubt I would be able to get her to try lentil pasta, or if her little rural town even has a grocery store that stocks it.

So far, I have a recipe for sheet pan chili since I know she likes chili. Does anyone else have some simple low sugar/carb recipes? Thanks!
