What does the rulebook say about contested possession? Confused about several plays from last night

On the Dak strip sack, initially Linval Joseph recovered the fumble, and there was a clear camera angle showing that he had the ball and was lying on the ground. Later in the pile the ball was ripped out of his hands - the refs returned the ball to Dallas

Similarly on the 2nd Quez Watkins interception, Watkins had both hands on the ball and his knee was on the ground while he was in contact with a defender. The defender then took the ball out of Watkins' hands, and it was ruled an interception

In my view, shouldn't the officials have ruled Joseph and Watkins down and the play over? They each had the ball, their knees touching the ground, and a defender touching them. Who cares if the ball was later taken out of their hands?

Is there some rule I'm missing here, where on fumbles or catches where both the receiver and defender have joint possession of the ball, where the play doesn't end until one person ends up with sole possession? Genuinely asking here, don't want to be a salty eagles fan bitching about the refs if there's a legit rule on this
