Do you guys paint over quickset?

I was watching a Vancouver Carpenter video and he mentioned seasoned drywallers know not to paint over quickset. Always do a skimcoat of all purpose before painting. He mentioned it's because it'll show the hard edge. I do a lot of patching (apartment turnovers) and I usually use 20 minute for my patches. I do a good job of sanding and make sure there is no hard edge, it takes a pretty bad day for my patches to show after paint. Is there any other reason?
