Successful Shopify stores - How do they make it relevant ?

Hello everyone,
I am a newbie to dropshipping and have nailed down on a product category to sell.

Next step is the store - Every next person suggests to open a Shopify store to sell products, but what's confusing to me is -
As a customer when I'm finding a product online(be it anything) I hardly see a shopify store popping up on google shopping section or regular searches.

Apart from big players(Amazon, BestBuy, etc.) its always either someone's Ebay store or a third-party website at best.

It begs me the question -

How do people with successful Shopify stores actually make it relevant ?
How to approach its SEO and make it visible to potential new customers ?
Is there something I'm missing here ?
