[Help] Behavior right after letting 11 month old out of her crate.

We got our pup two weeks ago. The owner said she was lab/german shepherd, but I don't see the shepherd. She was underweight, had a bad ear infection, had never been bathed, and had abrasions from the old owners big mean dog. She is not fixed.

We have to keep her crated when we sleep and while we are gone because we can't trust her yet, and she seems to like it at bed time. When I let her out in the AM she is excited but not overly so, and after about a minute of petting and a little jog around the house she is good. My husband goes to school four days a week so she is crated for the 5 hours he is gone, and then again for the 20 minutes it takes for him to pick me up. I let her out when I get home and she goes NUTS. She jumps and pushes. She scratches me, she even busted my lip yesterday because she jump face butted me. She hurts herself too by slamming her body into furniture and walls.

What can I do to help her stay calm? She is going to either going to really hurt herself or one of us.
