Hello, I am making a new character for Curse of Strahd and would like a bit of help optimizing my build. We be running Curse of Strahd with a three person party, so we wanted to try to min/max our characters and party a little bit (but not completely) so as to not get destroyed. Luckily I rolled a wild stat array, 17 17 17 15 13 11, and I plan on making good use of it.

My party consists of a paladin and a druid multi-classing into warlock (I'm not sure what subclasses), so I'm looking to do some healing though I'm not sure if we need that much of it since there are only three of us.

I also want to have relatively high AC since I don't want to die, and after looking at some options it seems I should either multi class into monk or fighter to get unarmored defense or heavy armor, or take some subclass with heavy armor proficiency. I'm leaning towards monk because we don't have anyone with good dex.

I'm thinking about playing an Aarakocra cleric with a level or two in monk to get unarmorered defense, and this idea seems cool to me. I'm not sure what subclasses I should do for that.

I'm also considering a twilight domain cleric, possibly a centaur or something else, and I'm open to taking some other subclass and putting a level into fighter if that will be better mechanics-wise.
