Could an illithid hive turn others into a mind witness-like creature?

From Volos Guide to Monsters, page. 176, it shows the stats of and tells of what happens when an illithid hive overpowers a BEHOLDER and devours its brain. If they can outpower a cr 13 legendary that is on their Dungeons & Dragons Monster Manual cover, then what about other creatures like an Adult Red Dragon or an Aboleth. Think of the pure madness if anyone can use make the stats for other creatures like Giants, Hags, Medusas, a purple worm!
