If I hold the left stick down while flying high, it's not going to turn the motors off is it?

Got my drone last night and it's awesome! So much to learn. I understand that near the ground I can hold the left stick down for over 3 seconds to turn off the motors. This won't happen if I'm flying at 200 feet right? The thought that I could hold the stick down a bunch and have my drone engines die is terrifying.
Also if I use return to home, can I just have it return to home and hover over the home spot instead of landing?
