removing sarking on section of wall

Hi All, currently renovating villa kitchen and have stripped old gib off to reveal the sarking on a small section of wall. It is a bit of a mess with different sizes of sarking. I was planning on removing all the sarking, planing the studs to get them plumb then either installing braceline gib or structual ply and then standard or braceline on top. Is it a bad idea to remove sarking even if you are going to re introduce bracing in these other ways?
