One topic I've found really exciting is developing new kinks and conditioning them to be stronger. I'm naturally more of a sub and have found I've become more into particular kinks that I wasn't much interested in when starting out (e.g. feet). I've also fantasised about kink conditioning to gain new kinks from someone else (have been fortunate to do this in the past and keen to do again one day).
