Oven roasted chicken, Garnet sweet potato swimming in butter and asparagus.

I’ve always have been a sucker for gravy. This was a Friday night so there was some drinking! I always have “packet” gravy around for emergency drunken meals. I took some shallots and sautéed them in butter till slightly brown on edges. Added a glugg (3Tbsp ?) of sparking wine and cooked the alcohol off. Then I added the packet of chicken gravy and the water. Simmered. Then I added the chicken juices from the pan. This gravy was deliciously unbelievable! So easy and did not taste like fake gravy.
