Should I secure a contract for freelance software development?

Hi, any developers out there? I've just started my freelancing journey as a software developer for desktop applications. I mainly deal with businesses that want systems for their operations. Right now I'm working with a client, who seems to be trustworthy but I can't tell for sure. Should I make a contract first and get it notarized for my own safety that he would pay me at the end of the project? If I should, where can I find a template or sample of this contract for me to copy, I'm not familiar with legal documents as I'm still kind of new. Thanks in advance.
