Sub-acute rehab RDs! I have a resident that's refusing to eating anything that isn't "organic". How would you handle this situation?

I have a resident that is refusing to eat anything that isn't labeled as organic. However, my facility doesn't purchase anything that's labeled as such. The resident has no dietary restrictions otherwise. How would you/ your facility handle this situation? Is it a preference that has to be honored to avoid getting in trouble with state inspectors?
