A couple years back, my 75yo father was told that he was “pre-diabetic.” He was overweight from his 40s to his mid 60s, but has lost a lot of weight over the last 10-ish years and is currently a standard weight for his height.
Since then he has basically eliminated all carbs from his diet. The obvious stuff like sweets, bread, pasta, and finding “no sugar” versions of everything, also avoiding both stevia and sucralose.
He has also eliminated all fruit and basically all vegetables, except for things that are low carb/high water content like celery and zucchini. His caloric intake is mostly cheese, eggs, nuts, and meat.
He isn’t particularly happy about this diet. I don’t think he misses sweets, bread, and pasta, but I know he definitely misses veggies.
In the small amount of research I’ve done, it doesn’t seem like this extreme take on a low carb diet aligns with his current condition. This is something he has come to by himself, and was not recommended to him by his doctor. I’ve tried to learn more but he refuses to say where he got the recommendation from.
Any perspectives on this would be greatly appreciated and any links to relevant research would be fantastic.
