How is Grafana Loki useful if it only indexes on like 1 tag per log?

I’m looking at implementation a log aggregation system for my app, to see all the requests that are coming into my api service (for troubleshooting).
I was initially set on the ELK stack (Elasticsearch, logstash, Kibana) but wanted to look for other alternatives and compare.
Grafana Loki seems to be a widely loved system, but I’m failing to understand how I’m going to search through my logs if it doesn’t support high cardinality searches?
Correct me if I’m wrong, but Elasticsearch indexes ALL fields within a json file, so that you can query any field, but Loki only indexes based on a single tag? How would I be able to filter by request method and URL path (for example) if there is only one indexed tag?
