I have a small food preservation company in Greece and thus far I’ve been using the sun to dehydrate, but as demand increases I literally don’t have outdoor space for all the dehydration tables like the ones I constructed last year. Unfortunately I need to move production indoors, also need to produce more uniform products. Basically I need something that’s restaurant grade, at least 10 shelves, that can run for weeks on end (to keep up with the bountiful spring/summer season), and that I can fix myself or at an electrician if is breaks down (most restaurant grade machines have interchangeable parts, like motors, etc), because I live far away from urban centers, near the fields. If the thing breaks down and I’m expected to ship it somewhere, that’s just not a possibility, so nothing proprietary where if something breaks the whole machine goes in the gutter. Any input of specific brands would be highly appreciated, I can do further research on my own. Thanks!
