I'm fairly new to dehydrating, but I've been trying to get some good jerky for my backpacking/hiking trips. I've done a few batches (dry rub, marinate soak) but I did one over the weekend and I don't know were I went wrong. The slices were a little thicker than normal, about a 1/4 inch, and I soaked it over night in a worcestershire/soy sauce/teriyaki/pineapple marinade. Dehydrated it for about 8-9 hours, until the meat was dry, but still, it seems to "fall apart" with one bite. There's no chewiness to it like you would normally find with beef jerky. Is it because of the pineapple? Too much acid made it start to breakdown? Should I have let it dehydrate more? Also, how do you go about getting the most amount of fat off your meat before dehydrating it? any tips?
