Dehydrating and vacuum sealing soups

Hi there I’m wanting to start dehydrating a variety of meals, mostly soups and stews that I can just throw in some boiling water for camping etc. I know in doing this regularly you want to avoid grease and fats because they’ll hold moisture and mold loves fat. But will I still need to keep that in mind if I vacuum seal the dehydrated food? Don’t really want to risk it if someone already has the answer for obvious reasons
