Best apps to use to replace Gboard?

I have been using gboard for a few years and I really enjoy the functionality, especially the gifs and the Emojis. But I know that they can track everything I say, so I think it's time to move off it.

Which are the best apps? I got open board oh, and it is nice as a regular keyboard but it doesn't have any of the extra abilities. Plus the voice to text is still using Google and I don't know how to switch that.

I also looked up anysoftkeyboard and it seems nice but I can't see any English version on f-droid.

Any tips?
