Because it’s not all about the bottom dollar. Yes solar will eventually be the best provider when future tech allows off planet solar farming. But until then we need reliability, nuclear is an absolute beast in reliability and consistent energy out put. So though it may cost more £ per KWH to produce, that outweighs having a system that on occasion fails to meet minimum demand and has to use France to meet the slack at a pretty penny to the tax payer
The fire up time isn’t a problem. It can output a very consistent amount of energy so can provide a strong baseline for the UK’s power. The slack in the system can be taken up by renewables, hydro storage and whatever else. Instead of having renewable as your baseline that actually can’t output consistently year round so it ends up a constant struggle to meet demand. Our demand is often met by France at nice £ to the tax payer.

Yeah, high electricity demand means all hands on deck. Not to mention some days the renewable systems might have to slack off for whatever reasons so coal gets used. If only we have more nuclear which is by far the most consistent form of power.
