How does humanity stack?

I'm new to DS1 and am a little confused how randomly I'll have an extra humanity in the numbers block by me health. I didn't consume any humanity so? Does it grant you one with a certain number of kills or something? I've lost so many of them from dying over and over and would really like to know how I might be able to farm them so I can summon people for help
