Looking for bicycle suggestions!

I'm sure y'all have seen posts like this before, but to minimize the money blackhole effect and end up in an indecisive gridlock, I'd like to narrow my search. I currently have a 2011 Giant Escape (large frame with 700c x 35c tires) that I've been mashing different parts to keep it alive, but it's been time that I retire it. This would take place as a daily driver/commuting bike for me. I have a single/fixed bike that I'm about to pull the trigger on and a bikepacking project I'm casually saving for.

The requirements I'm looking at:

  • Budget $1,000-3,000 USD
  • Disc Brakes
  • Sturdy Frameset (this may be a subjective factor, I ride fairly aggressive)
  • Fenders capability for up to 35c tires on a 700c wheelset (that being I can salvage my current wheelset)
  • Versatility, preferably something in the gravel category.
  • Something 1 by X, unless I can be convinced otherwise. (My current set up is a 44T by 11-28T with most of my time spent in 11-17T)
  • I'll be transferring my Salsa Woodchipper 2 handlebar from the bike to whatever I end up.

These are the main things that come to mind. Other things I should put out is that my daily ride is around 10 miles a day with hilly and typically wet conditions (Seattle). I'm also handy with a wrench, so keeping an eye out for used similar suggestions are welcome and if I can go under the budget, even better. Mods, if this isn't the place for this type of post, please direct me to where I can post this and delete this.
