How to know your cook is finished??

So Iโ€™m new to cooking and kind of new to smoking as itโ€™s been years and when I did smoke before it was always with my ex who did all the work. I just took hits lol. Anyway, Iโ€™m sure Iโ€™m under cooking, may not be using enough water and maybe too much/too little baking soda. Is it normal to have powder left in the spoon after the cook? Really wish there was a guide on here or someone to help!
