Rubber or leather soles?

I’ve only ever used rubber soles from brands like Ariat but I’d be willing to try leather if they’re worth it. For context I don’t usually wear boots for just fashion, I prefer functionality specifically outdoor functionality. I also live in Colorado so water resistance in snow and rain is crucial. What are your thoughts?
