So I'll spare you the long back story... suffice to say had COVID back in March 2020, started getting all of the long haulers symptoms in August.. worse in Novemeber, almost nonfunctional December / January. Brain fog, rapid unexplainable pulse, anxiety where medication made it worse, aches, what felt like chronic sinus infections, fatigues, low energy... etc... every day pick three things from a list of 15 and that was my day.
Out of the blue I got put into a sleep study, while taking the test I had a horrible sleep, couldn't sleep, constantly felt like I was suffocating, felt like my body was basically forgetting to breathe. I wasn't even sleeping yet and this happened. They tried to hard push sleep apnea, but I never had issues before and blew it off as a poor test.
After a few more weeks my sleep got worse and worse and my symptoms also got worse. I started to notice that as I stayed up later I ate more and more junk food later (not a healthy eating story so hold on).
So I started to track what I was eating and made a discovery... anytime I ate any food with MSG (monosodium glutamate) within 8 hours of going to bed, my sleep was awful. Like unsalvageable and absolutely ruined my next day. I noticed that on days I didn't have MSG (Lots of junk food has MSG) I slept well and had a generally good day with minor or no symptoms.
After this I started to track sleep MSG nights I was more awake, woken up by snoring events, O2 levels frequently dipping below 90%. Nights where I avoided MSG products before bed were much more restful almost no sleep disturbances, and O2 levels almost never dropped below 90%.
So I'm not sure if it's quincidental or helpful lto anyone but something to at least try I suppose.
