Publix Overage Question

On a recent shopping trip to Sam's, we ended up with an Athenos feta that was full of plastic shards, as if there was an issue at the plant. I let Athenos know about it just in case, and they also thanked me by mailing me some $7 off any Athenos or Polly-O product.

So my question is: my Publix stores really only carry products from those two brands that are $4 at the most. Obviously we're probably all familiar with overage from Publix, which would often happen if there was a BOGO for say a $2.99 item and we could use 2 $2 coupons for example, giving $1.01 in overage that is applied to the rest of the order.

But can I just use a straight $7 coupon on a product that doesn't cost as much as the coupon's value? I honestly don't think I've been in that situation, so I'm just curious if it would ring up correct, if overage would be given, etc. Part of me thinks it would, because Publix would be reimbursed for the amount, but I'm just not sure.

If that's the case, the obvious move is to wait for Athenos to go BOGO and use 2 $7 coupons for nearly $10 in overage for the rest of my purchases.
