how should I create my portfolio when I'm working full-time as a copywriter?

Currently, I'm a full-time copywriter at an agency, but I'm trying to change jobs and also build my freelancing business. In my current job, I submitted my work samples and they considered that my portfolio. Everywhere I apply, they ask for a portfolio. However, I need to create a proper one now. What can I do? I usually write copy for email campaigns and social media campaigns. Can I use work I've done for clients of my agency?
