Why do recipes involve cooling potatoes before frying them?

Iโ€™ve been seeing a lot of homemade fries recipes and vids online where people chill their cut potatoes in cool water (with ice sometimes), and Iโ€™m just wondering what itโ€™s for. Is it just to make them crispier, less oily after frying, or for some other reason?
