For context, I am a professional cook at a nice hotel. Right now I am in staff accommodations which means I do not have the largest kitchen. I bought a kitchenaid artisan stand mixer off one of the chefs I've been working with for a really good price.
I'm looking for ideas of what would be something easy(ish) to make to test the mixer. I am looking for stuff I could cook on a small baking sheet or a frying pan. Maybe cookies or bread, but I'm looking to make something that I can vac-pack the dough or something to keep for later. Maybe pasteurize some eggs for some for sure safe cookie dough?
