Any oven cooked pulled pork tips?

So I tried to make pulled pork last weekend for the first time and my bbq sauce turned out OK and the bark on the pork was good but the rest of it was super bland and dry in the middle. I followed one recipe that said cook for (X) hours covered then 1.5 hours uncovered. Other recipes I find say don't cover, or roast for an hour and then cover, or keep covered the whole time.

Any tips or insight would be appreciated.
